The Goat Shepherd’s Table: A Traditional Greek Cheese-Making Workshop
Step into the heart of Greek pastoral life and discover the ancient art of traditional cheese-making at The Goat Shepherd’s Table. Guided by expert cheesemakers, this hands-on workshop will take you on a journey from fresh goat’s milk to delicious artisanal cheese—just as Greek shepherds have done for centuries.
Begin your experience by learning how to milk a goat the traditional way, exactly as it has been practiced for generations on the island of Kos. You’ll understand the rhythm, respect, and gentle techniques used by local shepherds to keep the animals calm and healthy. Along the way, you’ll gain insight into the everyday life of goats on Kos—how they roam freely in the hills, the natural herbs they feed on, and how this unique island environment shapes the exceptional quality and flavor of their milk.
Using this fresh, local milk, you’ll then learn time-honored techniques to create authentic Greek cheeses such as white cheese, myzithra, and anthotyro. As you stir, curdle, and shape the cheese, you’ll hear stories of shepherding traditions, Greek food culture, and the deep connection between the land, the animals, and their flavors.
Once your cheese is ready, gather around the shepherd’s table for a tasting experience, pairing your handcrafted cheeses with tomatoes, cucumbers, olives, freshly baked bread, and regional ouzo—a true celebration of Greece’s rich culinary heritage.
Whether you're a cheese enthusiast or simply curious about traditional food-making, this authentic and immersive experience will leave you with new skills, delicious memories, and a deeper appreciation for Greek gastronomy.

What a fantastic few hours, we were honoured to meet Nikos, his lovely wife and family to experience a goat milking both by hand and machine. We followed the process of cheese making which we got to taste along with a spread of homegrown tomatoes and homegrown cucumber, olives and freshly baked bread. Nikos showed us his art of how he whistles the goats, it was a truly unforgettable day and advise anyone visiting Kos to give it a go, we were then transported back to our hotel in luxury transport, thank you to you all, it made our holiday

Excellent and informative couple of hours. We were picked up from our hotel in Kos Town and driven to Nikos's goat farm. Michael, Helios Tourse introduced us to the family who gave us a very warm welcome. We then went to milk a couple of goats by hand and machine (which was in no way modern!) Following this we went to see where the cheese was made and helped in the process. We then joined Nikos to taste different varieties of the cheese with homemade bread and tomatoes and tomatoes (and a glass of ouzo) A great day learning about the culture of Kos, Kefalos in particular, and the traditional way of owning goats and making cheese on Kos.
